Fizz, a funky name for a great sparkling. The combination of superb terroir, careful handling of pristine grapes and thoughtful handling achieves a youthfully fruit driven Pinot Chardonnay in contemporary, easy to appreciate styling. Serve chilled and leave the strawberries out, there's enough of that flavour in the wine already.
Chardonnay and Pinot Noir thrive in the cool climate high altitudes of Adelaide Hills, where the crisp spring and early summer weather preserves natural acidity, heightening and defining the flavour. Only the best parcels of fruit available, grown predominantly to fine vineyards in the Onkaparinga Valley, are considered for inclusion into Mojo Fizz. The combination of terroir, pristine fruit and thoughtful handling achieves a youthfully fruit driven Sparkling Pinot Chardonnay. Grapes are gently passed through a membrane press, followed by inoculation to neutral yeasts and tank vinification at low tempratures to add texture. Secondary Charmat fermentation infuses the wine with creamyness and effervescence. Alcohol 12.0%
TASTING NOTESLight yellow with the palest of pink tinge. Fresh restrained, youthful aroma of subtle peach and white flowers with a whiff of doughiness from the yeast influence. Appealing and vibrant palate driven by green apples and wild strawberries, all well supported by zingy lemon and lime tartness. A subtle layer of creamy meringue is found underneath, which morphs into a sherbet tang as it drifts toward the long dryish finish. The essential party starter, Mojo Fizz will serve as the perfect partner to shellfish.
