The [yellow tail] brand has become the most successful in the history of the Australian wine industry. Fruit is picked early and handled as gently as possible to minimize skin contact or phenolic extraction. Batches are cold fermented to retain bright fruit flavours, followed by clarification and the traditional Charmat process of vinification. [yellow tail] is treated to a secondary fermentation at lower temperature in pressurised vessels to create the sparkle. Yellow Tail is estate grown, vinified and bottled, ensuring that the final wine is handled to the most exacting standards from vine to glass.
TASTING NOTES
Tantalizing rose pink colour with a lively bead. [yellow tail] is delightfully fresh, fruity and soft with great palate length. Lifted aromas of strawberries and spice are united by flavours of sweet cherries and tropical fruits. About Yellow Tail Winery
The Casella family has been making wine in the Riverina since 1965
Filippo and Maria Casella emigrated to Australia bringing with them their know-how acquired through three generations of grape-growing and winemaking in Italy. Recognising the potential of the region, Filippo purchased a farm in the town of Yenda, New South Wales. After selling the grapes from his farm to local wineries, he decided in 1969 that it was time for a new generation to put its winemaking skills to use, and the winery was born. Yellow Tail»
