An agile Riesling wine with a bouyant palate and sprightly aromas, sourced from the finest vineyards under the hospice of the award winning Casella winemaking team. [yellow tail] know that the best Riesling wines can only transpire through an insightful selection of site, diligence in the vineyard and judicious vinification techniques. The warm climate of the Riverina region provides the backbone of fruit exhibiting substantive grapefruit and apple flavours. Fruit from the cool climate regions contributes crisp acidity, elegance and finesse.
Yellow Tail's John Casella hand selects only the best parcels of Riesling grapes for the [yellow tail]. He looks for flavour, acid balance and colour. His goal is to produce a bright Riesling wine with clean varietal expressions and aromatics while maintaining the essential softness and drinkability of the [yellow tail] style. The fruit is harvested in the cool of night to retain maximum freshness and flavour. Free run juices are then cold fermented after inoculation by select aromatic yeasts. Once completed, the wine is cold stabilised and cold filtered to retain rich aromas and freshness. Yellow Tail is estate grown, vinified and bottled, ensuring that the final wine is handled to the most exacting standards from the vine to the glass.
TASTING NOTES
Bright pale lemon appearance. A light, refreshing Riesling with characters that leap from the glass. Zesty lemon and lime aromas with a hint of orange blossom. Luscious and lively, bursting with fresh fruit and subtle cinnamon undertones, [yellow tail] is full of flavour. The perfect partner to seafoods or chicken caeser, Asian cuisines and fun loving company.

About Yellow Tail Wines
The Casella family has been making wine in the Riverina since 1965
Filippo and Maria Casella emigrated to Australia bringing with them their know-how acquired through three generations of grape-growing and winemaking in Italy. Recognising the potential of the region, Filippo purchased a farm in the town of Yenda, New South Wales. After selling the grapes from his farm to local wineries, he decided in 1969 that it was time for a new generation to put its winemaking skills to use, and the winery was born. Yellow Tail»
