From grapes grown to the finest vineyards along the Tamar Valley in northern Tasmania. Great wines are made in the vineyard and it is the exceptional quality of Pinot Grigio grown to the Kayena site which forms the backbone of Devil's Corner. The low to moderate yields produce small volumes of good quality fruit. Pinot Grigio is harvested and crushed to press with initial oxidative handling to achieve colour stability. Following the crush, juices are run off skins immediately after pressing and cold settled to remove solids. Juices are racked and fermented in tank under strict temperature controls, a small amount of partial lees contact and stirring contributes in mouth feel and complexity.
