The Taylor property was carefully chosen for its rich Terra rossa aspects. Precious red brown loams over limestone soils, where vines can be revitalized by the splendid cool climes of Valley Clare. Eighty Acres is a well established wine show competition winner, the latest edition in a succession of splendid releases. Whilst rich in texture, generous in flavour and engaging in complexity, Eighty Acres is defined by its soft, round middle palate, long elegant tannins and velvety, persistent finish.
Bill Taylor planted Cabernet vines by the Wakefield River in 1969, ultimately establishing one of the most successful winemaking dynasties in recent Australian history. The auspicious climes of Valley Clare are favourably warm during the day and refreshingly cool at nights, ideal for the slow, even ripening of wine grapes. Cabernet, Merlot and Shiraz are harvested throughout the cool of early morning and de-stemmed into static fermenters for a warm, temperature controlled vinification. Upon completion, batches are transferred to a combination of new and prior use American and French oak hogsheads for malolactic. Components are then rack and returned to oak for a year's maturation. TASTING NOTES
Vibrant red with a youthful purple hue. The wine exudes a fully lifted, complex nose with aromas of blackcurrant, plum and mint. More savoury characters of dried herb with spice, cedar and chocolate add to the overall charm of it's endearing claret persona. Luscious assorted berry flavours throughout the palate while spice, liquorice and dark chocolate characters add complexity.

The tale of Taylors winemaking goes back a few years – three generations in fact, and all began with Bill Taylor Senior, and his love of a certain Bordeaux wine. Originally wine merchants in Sydney, a passion for wine was all part of being a Taylor, and in particular, for the famous French Clarets such as Chateau Mouton Rothschild in Bordeaux’s Medoc region.
