An elite Victorian Sparkler from some of the most superior sites, all over 500 metres above sea level, in King Valley, Macedon and Strathbogie Ranges. A multi dimensional wine, dominated by a slightly larger component of Pinot Noir, tightly woven from a tapestry of hand chosen parcels, the auspiciously high altitudes and regional diversity yields harvests of intensely flavoured fruit, with refined natural acidity and stylish balance. A wine of great persistence and integrity, character and charm, to be savoured at every opportune occasion.
Grapes are picked at the onset of fruit ripeness throughout the cooler parts of day to preserve quality and ensure minimal extracts. Parcels are separately pressed and vinified to retain the uniqueness of each site. King Valley yields a quality of Pinot Noir with bright cranberry flavours, Mount Macedon makes Chardonnay with a mineral, linear element, Strathbogie Chardonnay lends a zesty lime citrus note. The final assemblage is treated to over three years ageing on sedimentery lees while treated to a traditional course of bottle riddling. Chandon Cuvée 500 is disgorged and dosaged, resealed and rested in bottle before release, contributing an additional measure of integration and complexity to the wine. Alcohol 12.5%
TASTING NOTESPale yellow hue, fine bead and persistent mousse. Nose opens to Chardonnay fruit characters, white peaches and grapefruit over hints of orange rind. Complex patisserie aromas of pear tarte and brioche from rich yeasty autolysis. Palate shows bright fruit elements mixed with subtle yeast age complexity, baked quince and pomegranate flavours mingle with toast and almond meal. Creamy in texture, the palate is supported by zesty acidity.
