This is the first time that Yarra Burn Shiraz has been entirely from the Pyrenees region, reflecting the magnificent red vintage in the region. 2003 was warm and dry but also very low-yielding, resulting in fruit with fantastic concentration of flavour. An honest, western districts Shiraz with warm Rhône-like qualities, offering earthy flavours of blackberry and plums, thoroughly distinguished, impeccably fine and tight.
Yarra Burn are particular about where they grow Shiraz. Through very selective planting on the warmer northern-facing vineyard slopes, the Shiraz ripens quite readily, producing even more intense flavours of white pepper and spice. Fruit for this Shiraz was both mechanical and hand harvested prior to air bag pressing, open and closed fermentation and subsequent maturation in new,one and two year old French Burgundy-coopered oak. A nose of liquorice and charry spice, complements the creamy textured palate, with a silky persistant finish. Alcohol 13.8% pH 3.56 Acidity 6.1 g/litre Winemaker Mark O'Callaghan.
TASTING NOTES
Deep crimson red in colour, this wine fills the nose with intense aromas of blueberry, cinnamon spice and cloves with tones of freshly cracked black pepper, roasted coffee bean and mint. Inspiring musky aromas of animal hide reveal light berry/plum fruit and cedar/vanilla. On the palate, big powerful tannins and cedary French oak flavours fold seamlessly into an abundance of rich, ripe mouth-filling fruit. The savoury richness of this integrates superbly with fleshy acidity and provides great length of flavour and elegance for a strong even finish. Drink now with aged porterhouse under demi-glazed slow roasted roma tomatoes, or enjoy further bottle-aged complexity with cellaring until 2010.

About Yarra Burn Wines
In August 1975 David and Christine Fyffe purchased a property near Yarra Junction that has softly undulating good soil and fabulous views to Mt Donna Buang
In the spring that followed they erected makeshift houses to stay in while they planted vines on their days off from running Mayerling Cellars. Initial plantings were 2 acres each of pinot noir, cabernet sauvignon and half an acre of gewrztraminer, which was fairly quickly replanted with merlot when it lost popularity. The original name Settlement Vineyards was already registered so they settled on Yarra Burn, as the property is located half way between the two small townships of Yarra Junction and Wesburn. Part time study in viticulture and oenology at Roseworthy and Charles Sturt and help from consultants contributed to Yarra Burn's success. In late 1977 the Fyffes sold their bottleshop to build a house and an estate winery at Yarra Burn. They were encouraged and assisted by their friends at Jean Jacques by the Sea in establishing an onsite restaurant. Yarra Burn»
