Grapes are harvested at optimum ripeness gently crushed, batches are chilled to retain bright fruit flavours and gently pressed. Juices are to a controlled vinification at cooler temperatures to enhance the exquisite varietal fruit characters. Upon completion, components are matured for six months on lees to build texture and complexity before assemblage.
