The Jacobs Creek team spend time in the vineyards identifying quality parcels of Riesling. Great effort is taken at each stage to retain and maximise varietal expression. Harvesting is conducted throughout the cool of night, grapes are immediately delivered to the winery where they are destemmed, gently crushed and pressed to minimise skin contact, the extracted juices must be soft and low in phenolics. Following clarification, ferments are initiated by choice strains of yeast at cooler temperatures to preserve and enhance natural varietal fruit character. Upon completion, components are assembled and stabilised, clarified and bottled for pleasant early drinking. Alcohol 12.1%
