The finesse of Yellowglen's exquisite range of sparkling wines, is due in no small part to the quality of Chardonnay and Pinot Noir, sourced off the finest sites. Vines are husbanded to yield grapes specifically for sparkling wine, exhibiting good natural acid structure, generous with flavour. Treated to the full Methode traditionelle, bottle fermentation, lees maturation and bottle ageing, Yellowglen complex, developed flavours and a creamy elegant mousse. The highly revered Yellowglen styling, exciting fruit characters, a crisp dry finish and excellent length. Yellowglen's estate owned and operated, highly specialized sparkling wine vineyards, yield harvests of the finest fruit. Parcels of Chardonnay and Pinot Noir are crushed and gently pressed to fermenters, only the cleanest free run juices are retained. A cool, controlled vinification proceeds until the desired level of natural sugar is achieved, whereupon ferments are arrested and the batches settled. Components are inoculated for full malolactic, followed by an assemblage which brings all components into perfect harmony. The wine is filled to bottle for a year on sedimentery yeast lees, developing texture while imparting great depth of flavour and infusing complexity, delivering a rich and satisfying wine.
TASTING NOTESVibrant light yellow in the glass, a fine and persisitent bead. Lifted rich yeast characters on the nose, florals and vanilla bean, cashews and nougat. An elegant palate structure, flavours of melon and custard apple, strawberries and wild red currant, followed by the citrus Chardonnay characters of lemons and stonefruit, limes and quince. A clean, lingering finish, balanced by juicy natural acidity. |
