Act Three of the exciting new opus from De Bortoli, a mostly Pinot Gris wine, predominantly from Wombat Creek Vineyard at Gladysdale in the Upper Yarra, vinified alongside a judicious measure of complimenting white varietals, to form a whole that's so much greater than the sum of parts. Judicious inclusions of Gewurztraminer, Riesling and Pinot Blanc, for a measure of interest. So very easy to enjoy, well chilled alongside cheeses and gourmet delights, the definitive refresher to imbibe on a summer's day.

The De Bortoli team are very close to the land they work and make a serious commitment to the environment, going well beyond mandatory agricultural requirements to implement world's best sustainability practices. The fruits of their labour translates into the quality of their wines. Grapes are hand picked off good vineyards, amongst the coolest and slowest ripening sites in Yarra Valley, which are trained to yield the finest harvests of Pinot Gris. Parcels are treated to vinification in a mix of large fermenters and smaller oak casks. Wild yeast inoculation and a course of lees re-suspension contribute creaminess and complexity while retaining natural sauvage. Alcohol 12.5%
