Chardonnay is sourced from Dixons Creek and Tarrawarra, Yarra Glen and the Upper Yarra. Grapes are harvested throughout the chilly, early hours of morning at optimal maturity. The cooler blocks are generally picked at lower sugar levels to retain delicacy in the wine. Parcels are delivered straight to the Yarra Valley wineworks for immediate processing. Fruit is crushed, pressed and allowed to settle overnight. This provides enough natural clarification for a combination of fermenters and oak barrel vinification while extracting some good phenolics for texture and minerality. A program of lees stirring and partial malolactic contributes complexity and creaminess while enhancing texture and mouthfeel. Alcohol 12.0%
