A majority of fruit is sourced from the eminent Wilyabrup area of Margaret River, a district that's renowned for producing exceptional Cabernet wines. The balmy afternoon sea breezes serve to cap evening temperatures, making for cool, summer nights which are ideal for the production of intensely flavoured grapes. Parcels of Cabernet Sauvignon destined for inclusion into Metricup Road are harvested at complete flavour ripeness, exhibiting an intensity of colour, tannin ripeness and varietal definition that's markedly Margaret River. Evans & Tate were a pioneering winemaker of Western Australia, now well established as one of Margaret River's most eminent estates. Cabernet grapes are picked at night and cold soaked on skins to maximise colour intensity and stability. This technique also encourages bright, lifted fruit flavours and aromatics, permitting ferments to be pressed early, achieving soft textures in the wine. All batches are aerated thoroughly throughout vinification to maximise colour intensity and fine tannin structure. The wines are pressed to tank for completion, once dry, the batches are racked separately off lees into a balance of new and one year old French oak barriques for malolactic and eighteen months maturation.
TASTING NOTESDeep red with a vibrant purple rim. Bright, lifted aromatics, redcurrant, tobacco leaf and dried herbs over background notes of cedar and toast from maturation in French oak. Plums, redcurrant and blueberry flavours dominate the fleshy front palate, a seamlessly structureed palate showing lovely freshness before a long, flavoursome finish on a slight tannic grip, expressing the purity of Margaret River. A generously flavoured, approachable and satisfying expression of Cabernet Sauvignon to pair off with well seasoned meats or piquantly spiced Moroccan quail. |
