An even ripening produces excellent fruit intensity, while retaining excellent balanced natural acidity. T'Gallant are heavily influenced by European winemaking techniques and by ancient winemaking styles, but the true focus is on creating heartbreakingly beautiful wine and food utopia. T'Gallant's diverse range of premium wines and imaginative packaging to match, are inspired by the cool, maritime climates of Mornington which ripen grapes to beautiful, intense flavours. Sauvignon and Chenin Blanc grapes are picked at the optimum level to capture ripe fruit flavour and crisp acidity, the wine went through a controlled cool ferment to retain its fresh fruit characters. T'Gallant was cold settled and bottled immediately after blending, completely unwooded without any oak influence. Alcohol 12.5%
