A delicately oaked Eden Valley Chardonnay, produced in small quantities by one of the Barossa'a great winemaking dynasties. Barrel aged, it sees an extended period on lees to give a more savoury flavour, achieving a round, voluptuous body.

Eden Valley has become synonymous with white wines of exceptional quality and elegance. The high altitude Mount Crawford Vineyard towards the south of the valley yields parcels of outstanding Chardonnay. Grapes are hand picked for optimum quality, crushed, destemmed and treated to a membrane press, the pressings are all discarded. Settled juices are racked to oak for a slow, natural fermentation by wild yeasts, retaining all the natural flavours of the Chardonnay fruit. The wine was left in lees in completely new French oak or ten months, stirred weekly to increase complexity and mouthfeel. A portion of the wine completed malolactic. The wine was then racked, filtered and bottled. Alcohol 13.0%
