Redbrook capitalizes on the exquisite synergy derived from omniscient viticulture and sagacious winemaking. Fashioned for style, elegance and complexity, Redbrook is an ultimate expression of the vintage and of exceptional Margaret River fruit grown to vineyards which have consistently delivered the highest quality grapes. The salubrious maritime climes along Margaret River encourage flavour, tannin and structure to catch up with sugar ripeness, yielding an intensely coloured Cabernet Sauvignon with concentrated, elegant varietal flavours and fine, ripe tannins.
Vines are treated to shoot thinning and bunch removal to achieve perfect balance and even ripening. Parcels of Cabernet Sauvignon are harvested at night and separately cold soaked for several days on skins in small fermenters to maximise colour intensity and bright, fresh fruit characters. Ten days of vinification and a further seventeen of maceration are followed by pressing into a combination of seasoned and new French oak hogsheads and barriques for completion of malolactic. After twelve to fifteen months maturation, components are assembled into the finished wine and bottled unfined for a term of bottle age before release.
TASTING NOTES
Deep purple black with vibrant purple rim. Cool Cabernet characters of redcurrant and tobacco leaf overlay riper characters of cassis, green olive and blood plum. A medium bodied wine with remarkable depth and length of flavour. Underlying notes of cedar, toast and savoury spice from maturation in French oak contributes subtle complexity.

Like many tales, Evans & Tate's does not begin in Australia. Lionel Teitelbaum was born in 1899 in a village called Nicopol in the Ukraine. Still a young boy when he emigrated to Australia in 1909, Lionel was bounding with confidence and enthusiasm. Such energy translated into a successful family and business life, creating a solid foundation for the future Tate generations.
