Sauvignon Blanc grapes were selected from premium growing regions throughout South Australia, although primarily the Limestone Coast. Parcels of fruit which showed generous fruit concentration were identified and treated in the soft press winemaking style. Only the free run juice was used to minimize any harsh phenolics and cool fermentation temperatures were carefully maintained to ensure retention of varietal fruit characters.
