Windy Peak consistently over delivers on quality, specializing in exciting varietal wines such as Pinot Grigio. The philosophy is that great wine begins in the vineyard and should be treated to a minimal handling. De Bortoli retain the finest Pinot Grigio vineyards, having spent decades pioneering the varietal in Australia. Fully ripe fruit is harvested and pressed without crushing to retain vitality while avoiding any pink colour pickup. Batches are chilled to 5C before vinification at elevated temperatures on natural solids, a component is sent to seasoned French oak casks. Windy Peak is given extended time on yeast lees, regularly stirred to give complexity to the natural fruit flavours. Alcohol 12.0%
