Seppeltsfield comprises nearly one hundred hectares of vines, including parcels of the Palomino varietal. Some of the grapes from this vineyard are destined for the highest products from the Penfolds stable, Grange, St Henri and RWT Shiraz. A VIP (Vineyard Improvement Programme) is in place to ensure the best fruit is produced for the next century or two. A number of vintages have been assembled into the definitively dry Australian fortified. Wines of exclusively Palomino grapes have been matured in the traditional Solera method, utilising only the very first cut of free-run juice, the finest and most delicate. After an average maturation of seven years, the resulting wine is light in colour, refined and fresh.
