Vinification is kept simple, minimise any interventions but give the wine plenty of attention. The focus is on retaining freshness and purity of intense dark fruit expressions while managing the tannin balance of the intensely flavoured grapes. Components are treated to skin contact for a period of nine or twelve days with a pumpover regime tailored to each individual vineyard. Post pressing the wines spend twenty four hours in tank before transfer to oak for malolactic. Every barrel is matched to a specific batch of wine to promote harmony and balance whilst maturing. The program is typically American oak dominant for the richest parcels. All barrels are assessed before assembling into the final wine.
