During the earliest trials at Penfolds in the 1950s, Max Schubert experimented with Cabernet as the primary contender for his Grange project. The plantings around Australia however were limited and could not always deliver a consistency of quality. Reflecting the outstanding quality of Cabernet to come out of an idyllic growing season, vintage 1990 contains a higher than normal proportion of Coonawarra. In the Penfold tradition, fruit from Kalimna and McLaren Vale has been included to add extra depth of flavour and complexity. Grapes were harvested, parcel by parcel, pursuing full flavours, structure and balance. Bin 707 was matured eighteen months in completely new American oak hogsheads. Alcohol 13.5%
